Step 1:Brown the chicken breast in a deep Dutch oven or heavy saucepan over medium-high heat until richly caramelized.
Step 2:Stir in sweet sugar snap peas, baby bok choy, fresh ginger root and cook for 3-4 minutes until softened and fragrant.
Step 3:Pour in Smoked Spanish Paprika & Toasted Cumin, Extra Virgin Olive Oil, Ancho Chili Powder along with 1/2 cup of broth or water to deglaze the browned bits from the bottom of the pot.
Step 4:Reduce heat to low, cover, and gently simmer for 15-20 minutes until the flavors meld together and protein is fall-apart tender.
Step 5:Uncover, simmer for 2 minutes to thicken the sauce to your liking, and ladle into warm shallow bowls.
